This is an easy-to-make sweet potato pound cake recipe. The pound cake will come out extra fluffy and moist because of the sweet potatoes and the cake actually it tastes better the next day after it has cooled off. This pound cake recipe also works well with raisins, chocolate chips, or cocoa powder.
Ingredients:
- Sweet potato - 300 grams (cut into small pieces or mashed: steamed or boiled)
- Honey: 40 grams
- Unsalted butter: 2 sticks (200 grams)
- Sugar: 150 grams
- Eggs (medium): 4
- All-purpose flour: 200 grams
- Baking powder: 1 teaspoon
- optional: replace sweet potatoes with 1/2 cup of raisins or chocolate chips or 1/3- 1/2 cup of cocoa powder
Steps to make Sweet Potato Pound Cake:
- Preheat oven at 375 F and butter the baking tin.
- In a bowl whip the butter and sugar until it is light and creamy.
- Add in the eggs one by one keeping the mixture creamy.
- Then add in honey to the mixture and set aside.
- In another bowl sift the flour with baking powder and gently fold it into the creamy butter mixture.
- Once the cake batter is well-combined, add in the diced or mashed sweet potatoes and gently mix the cake batter.
- Pour the cake batter into the baking tin and lightly tap the tin to remove air bubbles from the cake batter. Bake for 40-45 minutes.
- Test with a toothpick by inserting it into the center of the cake and make sure it comes out clean.
- Take out from the oven and cool pound cake on a rack for 10-15 minutes before removing from the tin.
