Poached apricots are colorful, aromatic, and flavorful! Sometimes apricot fruits may be a little underripe or are a little sour to eat fresh, so add a little sugar, maybe some spices, and simmer until they are tender!
These amazing poached apricots are great eaten as is or baked in cakes or any baked goods. There are many other fruits that are great to poach, such as pears, apples, and nectarines.
Ingredients:
- 20 soft ripe apricots
- 400 ml of water
- 250 grams sugar
- 30 grams of raw honey
- 1 cinnamon stick
- 2 slices of lemon
Steps for Poached Apricots:
- Prepare the poaching syrup in a deep pot by boiling the water, sugar, honey, cinnamon, and lemon slices, and once heated turn it down to a simmer.
- Half the apricots by cutting the fruit along the groove, twisting them apart, and removing the stone.
- Place the cut apricots in the simmering syrup and cook for 10 minutes. Turn off the heat and let the apricots cool in the syrup.

Optional: Remove the apricot skin once it is cool enough to handle, and then return it to the syrup to cool completely.

Store and refrigerate the apricots in the syrup until needed. The poached apricots will keep for 3-4 days.

Sieve and keep the poaching syrup to poach other fruits, add to custards, or add crushed apricots, add pectin, and simmer it down to a jam.
