Trying to have healthy pancakes for breakfast by adding in a wholesome blend of grains to the pancake batter! I like to add in flax seeds mills, grounded chia seeds, grounded hemp seeds, and buckwheat. For a gluten-free version try the Gluten-Free Banana Pancake Recipe.
Ingredients:
- flour (blend in whole wheat, flax seed mills, grounded chia seeds, grounded hemp seeds, buckwheat, and others): 1 1/2 cups
- baking powder: 2 teaspoons
- baking soda: 1/2 teaspoon
- sugar: 2 tablespoons
- milk or almond milk: 1 1/4 cups (adjust up to 1 1/2 cups)
- eggs (L): 2
- butter or coconut oil: 2 tablespoon
Steps to Make Healthy Pancakes:
- Add all dry ingredients into a bowl and mix well.
- Then add milk in the middle of the dry ingredients and mix gently (it is okay for the dough to be slightly clumpy)
- Next, mix in the eggs and oil gently.
- Let the mixture sit for 20-30 mins, or even up to an hour so that the pancake batter becomes smooth and creamy.
- Cook over a hot skillet or pan.
- This recipe makes about 10 pancakes.
