I love this Favorite Banana bread recipe, it turns over-riped bananas into wonder every time I bake it. Because I reduced the amount of sugar in this recipe, it is actually a wonderful loaf to have for breakfast with some honey or jams. It is also very good with chocolate chips, raisins or walnuts.

Ingredients:
- butter: 1/2 cup
- sugar (option: substitute with brown sugar): 1 cup
- large eggs: 2
- flour (option: mix in whole wheat and milled flaxseed): 1 1/2 cups
- baking powder: 1/2 teaspoon
- baking soda: 1/2 teaspoon
- mashed banana: 1 - 1/1/2 cups (approx. 2 large size banana)
- sour cream: 1/2 cup
- 1 teaspoon vanilla
- chocolate chips, raisins or walnuts (optional)
Steps to make banana bread:
- Preheat the oven at 375F and butter baking pan.
- In a large bowl mix the butter and sugar until it is light and creamy.
- Add in the eggs one by one, the butter and eggs may separate but no worries, it will come together when the dry ingredients are added in.
- Next, add in all the dry ingredients and mix the batter gently until everything comes together.
- In another bowl mash the banana and then add it into the batter and mix well.
- Finally, mix in the optional raisins or chocolate chips.
- Bake for 30-40 mins (15-20 mins for cupcakes) and make sure to do the toothpick test.
*Try to use ripe bananas for natural sweetness, but do not use more than 1.5 cups of bananas, the batter will become too soggy.
